Abstract

The optimum conditions of  polysaccharides production  studied  from  Lactococcus lactis subsp. lactis showed that the best condition was when used M17  supplemented by carbon source 10 % glucose  the amount of polysaccharides was 0.148 gram dry Wight , and nitrogen  source 1.5 % casein the amount of polysaccharides was 0.209 gram dry Wight and mineral salts gram dry Wight 0.1 m gm∕ L calcium chloride  the amount of polysaccharides   was 0.21 gram dry Wight and 0.5 m gm∕ L  Vit .C  the amount of polysaccharides   was 0.204 gram dry Wight compared with the amount of polysaccharides produced from this bacteria used M17 Non supplemented  0.1 gram dry Wight, the temperature 25 ْc the amount of polysaccharides  was 0.205 gram dry Wight,  pH for exopolysaccharide production was amount 0.212 gram dry Wight , the size of the primary vaccine1   × 10 6 cell / ml the amount of was polysaccharides   0.2 gram dry Wight and the duration of the fermentation  reached 24 hours in media the amount of polysaccharides   was0.216 gram dry Wight .
